Question : Help with lemon muffins?
I'm trying to make lemon muffins and can't seem to get good ones. Every other muffin I make comes out good but the lemon are more like hockey pucks than muffins. They are good, they just don't dome. They also have a cornbread like texture. I think it's too much liquid or something because the recipe calls for lemon zest but I use lemon juice. Here's the recipe: * 2 cups all-purpose flour * 1/2 cup white sugar * 3 teaspoons baking powder * 1 tablespoon grated lemon zest * 1/2 teaspoon salt * 3/4 cup milk * 1/3 cup vegetable oil * 1 eggAny way to get good muffins without flying saucer tops?

Answer:
if the recipe only calls for zest, and you are adding the juice, not only are you adding too much liquid, but you are also adding a ton of acid. That will affect how your batter comes out. It might be degrading the other ingredients too much. why not just use the zest? Its got a much more lemony flavor. If you don't have a zester OR a cheese grater here's what I do: take a peeler (like for potatoes) and peel off the rind (not the pith. the white stuff underneath, that's too bitter) and then pop it in a blender or food processor until its basically zest like.

I've been away from the hockey section for the past 2ish years and it seems the quality of questions has really dipped. I went through 4 pages of questions and didn't see a sign of Bob, LITY, or Homes...It's like waking up from a coma in a zombie apocalypse movie.Anyway, hockey question. Give me a break if it's rustyLet's say Crosby stays out all season due to his concussion, Ovechkin continues along the path of his good, but not Gr8 (See what I did there? Clever, right?) season, Malkin has a disappointing year, and Tampa Bay gets trapped under a dome preventing Stamkos from achieving any more this season. Who gets the Hart then?Meerkat -- I had to make a lot of IFs...otherwise people would have just wrote Crosby, Stamkos, Malkin, etc. Plus it was getting progressively more fun to write

Bob isn't usually on until later. LITY is still around and once in awhile we get to see Holmes. There is a whole new set of regulars. I wouldn't say the quality if the Q's has dipped, I would say there is a lot more repetition. Seems like there are a lot of young kids, too. I have no problem with that, though. Also, a lot of questions are asked about equipment which I find rather silly. You ask the sales person at your local store or your coach, not some faceless person on the Internet. For example, what skate fits for some might not work for another.That's a lot of IFs!! There are plenty of guys worthy for Hart consideration. Along about March is when we will get the clearer idea of who that might be.

Terry O'Reilly and Bob Probert. Two freakin maniacal animals that never got the chance to meet, as Terry retired at the end of the 84-85 season, and Probert came in during the 85-86 season.

Question : What is the ideal spacing between sides of a Vanguard Hi-Lo Inline Hockey Skate Chassis?
My Bauer RX-15 skates have a bent chassis, and I'm looking to make an aluminum block I can slide up into the chassis when I take the wheels off to help me bend it all back into shape. My question is What is the (non bent up) distance between the bearing "domes" on the inside of the chassis?

Answer:
I do not have a skate in front of me to measure unfortunately but is the chassis bent on both skates? Maybe you could measure the other one if only one of the 2 are damaged. I have bent out frames in the past, the main goal is just to get it completely straight, not bowing in or out at all, just make the 2 sides perfectly parallel. Also Bauer/Missions warranty is 90 days on the boot of the skate and 1 year on the chassis. If you are still within the warranty period you can send it back to them for repair/replacement.
