Question : What is a good croissant dough recipe that minimizes the chilling steps?
I've been looking for a croissant dough recipe, but all of them have obnoxiously large amounts of steps where you have to chill the dough for an hour before you can proceed with the next step. Can someone offer a decent recipe that doesn't require such tediousness? I realize that the chilling is necessary, but some recipes seem indulgent and ritualistic/superstitious with what they have you doing. Thanks in advance! :-)

Answer:
OK, you need to understand the science behind croissants. They are a very flaky dough, w/ lots of butter that has been chipped into the dough. It is then folded over and over to make layers, almost as much as puff pastry. When the dough is warm/room temp or body temp (from your hands) it stretches and gets greasy as the butter is melting. When it's cold, you can work with it easily. Furthermore, when a hot oven hits cold bits of bututer, it causes the water in the butter to evaporate nad make steam. If the steam cannot escape, which is usually can't, it causes flaky layers (same theory is making pie crusts). But if the butter is soft when it hits the oven, it just continues to melt and make it all greasy. For this reason, croissant, puff pastry, and pie crust dough is ALWAYS chilled after cutting in the fat so that the fat stays hard. This causes the best performance of the dough so the end product is flaky and light and full of layers. So I doubt you'll find a true croissant recipe that calls for doing it all in one fell swoop... refrigeration is your friend for croissants. If you dont believe me, make the dough. Chill half, and go ahead and make half. See which comes out better.

If you bought Fred Meyer's Chocolate Chip Cookie Dough Ice Cream and sorted out all the cookie dough, if you combined it, how many average sized cookies could you make?

LOl, maybe two or three, but it wouldn't bake up correctly, anwyay. You'd probably end up with a gooey mess.

 

Question : How do you make dough for crispy samosas?
I don't need that real stiff dough its hard to knead. Someone help me.

this is my favourite samosa pastry, trust me its very easy to make and tasty, another suggestion what you can do is making the samosa pastry by using spring roll wrappers. Cut into 2 1/2 inch strips the length of the pastry. Put a teaspoon of filling at one end and fold the pastry over diagonally, then fold again and again, still keeping a triangular shape. Moisten end of strip withi have also included in the recipe my favourite filling..enjoy them!!!PASTRY * 1 1/2 cups all-purpose flour * 3/4 teaspoon salt * 1 tablespoon oil or ghee (clarified butter) * 1/2 cup warm water FILLING * 1 tablespoon oil or ghee * 1 clove garlic -- finely chopped * 1 teaspoon fresh ginger root -- finely chopped * 2 medium onions -- finely chopped * 2 teaspoons curry powder * 1/2 teaspoon salt * 1 tablespoon vinegar or lemon juice * 8 oz steak or lamb -- minced * 1/2 cup hot water * 1 teaspoon garam masala * 2 tablespoons fresh mint or coriander leaves -- chopped * oil for fryingastry: Sift flour and salt into a bowl, add oil and warm water and mix thoroughly, until ingredients are combined. (Add a little more water if necessary to combine ingredients.) Knead for about 10 minutes or until dough is elastic. Cover with plastic wrap and set aside while preparing filling.Filling: Heat oil in a saucepan and fry garlic, ginger and half the onion until onion is soft. Add curry powder, salt and vinegar, mix well. Add minced steak and fry over a high heat, stirring constantly until meat changes color. Turn heat down and add hot water. Cover pan and cook until meat is tender and all the liquid has been absorbed. Towards end of cooking, stir frequently to prevent meat from sticking to base of pan. Sprinkle with garam masala and chopped mint or coriander, remove from heat and allow to cool. Mix in reserved chopped onion. ake small pieces of dough, shape into balls and on a lightly floured board roll each one thinly to a circle, the size of a saucer. Cut each circle in half. put a teaspoon of filling on one side of each half circle and brush edges with water. Fold dough over and press edges together firmly. You will now have triangular shaped samoosas.When they are all made, heat oil in a deep pan and deep fry a few at a time until golden brown on both sides. Drain on absorbent paper and serve hot.

 

Question : Is moon dough good when making 3D model of the human heart?
I am trying to make a 3D model of the human heart. I tried to look for clay and couldn't find the enough quantity (the stores had very small pieces of clay). SO I decided maybe moon dough is good as it never dries out. But I want to know if the moon dough will be good for my project. Will the moon dough stick together with other colors? NO! ive tried to do something like that and it can fall apart really easily in my opinion! I got some clay at walmart for 5 bucks and it dried good i could paint over it when it dried. its a good one pound tub of clay!

 

Question : What is the best device to make pasta dough?
I have 3 devices to make pasta dough (well, 4 if you count hands). I have a stand mixer with a dough hook, a food processor with a dough hook, and a bread maker with a dough setting. I want the easiest one with less clean up or just the best. What have you used? Also, do you use all purpose flour or semolina? I've never tried semolina but want to.

I've got all 4 as well, and I prefer using my hands. Making pasta dough is simple and quick, and I prefer not to have a machine to clean. Simply clean the counter where you mixed and kneaded, and wash your hands ;) You also have a feel as to the texture of the dough when mixing by hand. Hope this helps ;)****Updating****As to the second part of your question, which I missed, I use all purpose flour, wheat flour, and love adding different flavors such as spinach, tomato, or herbs. Not sure if I have ever tried semolina, but I probably have ~ big time bread baker, so have lots in the pantry to choose from.

 

Question : What is the cookie dough in the ice cream really made out of?
Cookie dough ice creme has chunks off cookie dough that taste just like regular cookie dough, but I doubt they'd put real cookie dough in the ice cream because of raw eggs.What is the "cookie dough" made from?

actually its is real cookie dough in the ice cream they just substitute the eggs with "something" else or no eggs at all. But i have no idea what that "something" else is sorry

 

Question : Dough is a mixture.Chocolate chips can be put in the mixture. Do the chocalate chips become part of the dough?
I think that dough is just a mixture of ingredients that will eventually be kneaded, and ultimately baked. I can't find any specification that says dough must be homogeneous or heterogeneous. When you add the chips, it's just one more ingredient to the heterogeneous mixture. Then you manipulate the dough, like the definition says, and bake it into cookies. I say that chocolate chips become part of a unified chocolate chip dough, while my friend says the chips are absolutely not part of the dough, because they are heterogeneous. Opinions?

Answer:
Yes the chocolate chips become part of the dough and they make the dough so much better to eat. I am not sure about the dough lasting long enough to be baked though.

I swear a few years ago I saw frozen pizza dough in the freeze section at the grocery store. it was in like a plastic bag in a big ball. Did I just dream this? Can you even buy pizza dough anymore?Also, can you buy just dough from pizza places? Will they let you?

Question : How do you roll dough out very thinly when it is sooo elastic?
I made dough and it is just sooo elasitcy that i cant roll it out thinly...how do i get it to go thin without it bouncing back...:( so frustrating!

I know this one. Don't let your dough rise at room temperature. Make your dough and immediately put in the refrigerator for 24 hours. It wont be so elastic.

 

Question : How long can you keep cookie dough for gingerbread cookies in the refrigerator?
Two weeks ago, I made cookie dough for gingerbread cut-out cookies and the dough has been in the refrigerator since then. Is it still good? Thanks.

Answer:
I would use it today or throw it tomorrow. The eggs are what would be getting old.
